Abstract

Rising consumption of ultra-processed foods is driving increases in diabetes, hypertension, obesity, and heart disease. Nutrition education serves as a key preventive strategy for improving community health. This program aimed to enhance knowledge, skills, and awareness of the GKJW Manukan Church congregation in Surabaya regarding healthy food selection, nutritious cooking, and balanced meal planning. Using a Participatory Action Research (PAR) approach combined with Participatory Learning and Action (PLA), the program engaged housewives, adolescents, elderly members, and young families through nutrition education, cooking demonstrations, hands-on practice, and pre-/post-test evaluations. Results showed strong engagement and improved understanding of balanced nutrition and healthy cooking, supported by a sustainable recipe booklet as a replicable community health model.
